Il s&#8217;agissait d&#8217;une exp\u00e9rience innovante et inclusive de professionnalisation et de formation. Celle-ci associait un lieu de production professionnel mutualis\u00e9 \u00e0 un dispositif d&#8217;accompagnement de cr\u00e9ateur d&#8217;entreprises sp\u00e9cialis\u00e9 dans les m\u00e9tiers de la restauration.
